Fold in 100 gm smoked or boiled chicken cut into small chunks, 1 sliced red pepper, ¼ cup of corn kernels and 1 sliced avocado. Place in lettuce cups and serve.

Mix½ cup cooked rajma, ½ a sliced onion, bell pepper, tomato and cucumber, 1 chopped green chilli, ¼ cup sweet corn and 1 cup sliced avocado. Add some chopped fresh mint and basil leaves. For the dressing, whisk together 1 tbsp olive oil, ½ tbsp lemon juice, 2 crushed garlic cloves, oregano, salt and black pepper to taste. Drizzle this over the salad and serve.

Combine 1 sliced avocado with 1 orange and a bunch of fresh mint leaves. Season with salt and oregano and dig in.
